Beef cutlets stuffed with roasted vegetables

Ingredients:

For the Beef Cutlets:

  • 4 beef cutlets (about 1/2-inch thick, pounded thin if needed)
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley (or 2 tbsp dried parsley)
  • 1 egg (beaten)
  • Salt and pepper to taste
  • 2 tbsp olive oil (for cooking)

For the Roasted Vegetables:

  • 1 cup bell peppers (diced, any color)
  • 1 cup zucchini (diced)
  • 1 cup cherry tomatoes (halved)
  • 1 small onion (chopped)
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste

Instructions:

1. Prepare the Roasted Vegetables:

  • Preheat your oven to 425°F (220°C).
  • In a large bowl, toss the bell peppers, zucchini, cherry tomatoes, and onion with 2 tbsp olive oil, dried oregano, dried basil, salt, and pepper.
  • Spread the vegetables in a single layer on a baking sheet.
  • Roast in the preheated oven for about 20-25 minutes, or until tender and slightly caramelized. Remove from the oven and let cool slightly.

2. Prepare the Beef Cutlets:

  • Place the beef cutlets between two sheets of plastic wrap and pound them to an even thickness, about 1/4-inch thick.
  • Season both sides of the cutlets with salt and pepper.
  • In a shallow bowl, mix the breadcrumbs, grated Parmesan cheese, and chopped parsley.
  • Dip each beef cutlet into the beaten egg, then coat with the breadcrumb mixture.

3. Assemble the Stuffed Cutlets:

  • Lay out the beef cutlets on a clean surface.
  • Divide the roasted vegetables evenly among the cutlets, placing the filling in the center of each cutlet.
  • Fold the sides of the cutlets over the filling and secure with toothpicks if needed.

4. Cook the Stuffed Cutlets:

  • Heat 2 tbsp olive oil in a large skillet over medium heat.
  • Add the stuffed beef cutlets and cook for about 4-5 minutes per side, or until golden brown and cooked through. The internal temperature should reach 145°F (63°C).
  • Remove the toothpicks before serving.
